ADVANCED COOKERY LEVEL 4
What this course does:
FutureCOL’s National Certificate in Advanced Cookery Level 4 and the optional London & City Guilds Diploma in Culinary Arts run simultaneously, offering students complete knowledge and practical application on a wide range of advanced cooking styles and skills giving the graduating student not only has a holistic view of the industry but also key skills for employment options in NZ and overseas.
Practical components are covered through functions held at FutureCOL’s in-house café and restaurant Hastings campus. Industry experience is gained through functions and out catering services with varied modern menus and lunch café style service.
Graduating students have skills to aim towards employment such as head chef, sous chef to chef d Partie in varied hospitality establishments. Note: NZQA course confirmation pending and will be finalized early 2011 – please enquire as to enrolment date.
Aims and objectives
Provide students with a wide range of advanced cookery related skills developed through practical ‘hands on’ tutoring environment of FutureCOL’s training kitchen, café and restaurant.
Cookery skills developed extend to advanced complex cookery techniques and cookery styles. Unique creative cookery styles are encouraged to ensure students develop their own palates and presentation of food. Students are encouraged to enter competitions to
